STUFFED TOMATOES BY BOBBY ANANTA (My Kitchen Say Thank You.. when I didn’t make a mess)

Rice (cooked) , Shallot, garlic, Anchovies, Parmesan Cheese, paprika, Indonesian Black pepper.. and 4 Medium Tomatoes (remember use your imagination.. and common sense and I said medium tomatoes because fit into ramekin)

I asked my friend.. Do you know how to describe “sharp flavour” of Indonesian Black pepper..

She said.. Sharp.. as sharp as Indonesian people talked about you behind your back!! hahahhaaaaaaaa

AMPYANG (PEANUT BRITTLE) BY BOBBY ANANTA

100 gram mix nuts (roasted for 20 minutes 170 C),

75 gram caster sugar

50 gram coconut sugar.

Pour sugar and coconut sugar into saucepan (low heat… Remember Low heattttt!!!), once its caramelize glossy colour add the roasted mix nuts, and pour the lot into baking tray.. easy peasy right… 🙂ImageImageImageImage

SPEKKOEK SPICE FOR MY WALNUT CAKE BY BOBBY ANANTA

Spekkoek spice is a blend of mace, cinnamon, cardamom, cloves and Vanilla pods. If you want to make your own spice mix :

1 tsp. ground cinnamon

1 tsp. ground mace (Bunga Pala)

1 tsp. ground cardamom

1/2 tsp. ground cloves

2 vanilla pods

for me.. I just pick up the phone and ask my Mum to blend it for me (I know is far away but it is worth it ) or am I Just being Lazy 😉

Tips : use 1 tsp. of Spekkoek spice for your walnut cake.. Lovely

BUREK (TURKISH MARTABAK) My Extended Family

I Just popped in .. Love my extended Family, I have Chinese, Timorese, English, and Turkish .. I wish I have Argentinian, so I can try Proper South American Steak, wish I have South African .. so I can try Braai , I wish I have Italian.. I wish.. yeah I wish I have family from all over the world.. So I just pop in and try their food..

Burek is similar with Martabak in Indonesia, is only using feta cheese. No fuss simply food and serve with Turkish Tea.

Syzigium aromaticum CENGKEH or CLOVES for PINEAPPLE PRESERVES by Bobby Ananta

Pineapple and Cloves are best friends.. for preserves, I always cut the pineapple chunky , Sugar or caster Sugar (hehehe.. they both sweet anyway), Pinch of Salt (Must).. and 5 Cloves, cinnamon stick..

TOMATO SAUCE (HOME MADE) FOR FULL ENGLISH BREAKFAST SANDWICH

Bacon Butty.. I call it Full English Breakfast Sandwich.. if you get cheap tomatoes.. 50 P a bowl from the market try to make your own Tomato Sauce.. Use your imagination..

Pinch of dark brown sugar.. pinch of salt.. bit of malt vinegar.. bit of maple syrup.. and Bay leaf..

In the Javanese concept Herbal tea always shows dark colour, with Tisane bright and fresh colour is a sign of fresh flovour.

The Recipe

A half dried mace (Manisan Buah Pala), (chop and soaking), crush a stalk of Lemongrass, few spring Mint and Orange Zest.

Pour over 12 fl.oz of boiling water … remember.. it isn’t Wedang Uwuh so don’t let the tea brew too long.ImageImage
